Sometimes you just need something quick. Maybe you’re busy getting chores done around the house. Maybe you’re running low on energy or culinary get-up-and-go. Or maybe, the weather outside is so nice and you’re seriously whooping your hubby’s butt at a game of Bags and don’t want to lose your mojo by stopping to make dinner, so you slap together some bread, jam, cheese, and arugula for a super quick and easy baguette sandwich supper. Yep, that’s the one.
This speedy dinner takes 15 minutes, tops! It’s a quicker variation on my Roasted Cherry and Brie Baguette sandwiches and just as delicious! You take a baguette, cut it into serving-size sections, slice those in half lengthwise, spread on apricot jam, top with brie, crumbled blue cheese, and arugula and call it a day. A nice crisp hard cider pairs swimmingly. Chow down, then getcha game back on! I kicked serious booty, six games total, 4 – 2 for the win! I suppose I throw like a girl…and by girl I mean BOSS. A boss who makes crazy good sandwiches.
15-minute sandwich break!
Put the sandwiches on a pretty platter to serve and spear them with toothpicks…it looks deceptively sophisticated.
Salty, buttery cheese with sweet apricot jam and peppery arugula on crunchy baguettes make for an easy meal or simple, elegant party dish. Score!
Arugula Brie Apricot Baguette Sandwiches
blue cheese, crumbled
Spread inside of all pieces of bread with the apricot jam, top one side with brie slices and crumbled blue cheese and the other with arugula. Put sandwich sides together and spear with a toothpick to hold together. Enjoy!
