While strolling through the farmers market I spotted this mix of heirloom cherry and grape tomatoes. The farmer was describing them to another customer so I stopped to listen along. He said the tiny yellow ones — yellow currant tomatoes — were nearly as sweet as grapes and offered them up for us to taste. I happily obliged. He was not kidding; they’re super sweet and delightfully juicy…and so darn cute!
This simple salad highlights the incredible flavor of these gorgeous tomatoes. With just a few other salad ingredients (avocados, onions, crumbly cheese, and herbs) along with a spicy limey vinaigrette, this quick and easy salad makes for a delicious, healthy, and colorful summertime side dish. Or, add it to any taco, sandwich or pita pocket for a complete meal. A veggie rainbow of flavor!
Spicy lime vinaigrette:
The smoked paprika turns this dressing a gorgeous burnt orange color.
Let the dressing set and flavors combine while you get the salad ready.
Simple ingredients with huge flavor: mint, cilantro, red onion, avocados, tomatoes, and ricotta salata
Slice the avocado in half lengthwise, then cut crosswise into half moons and Cs.
Pile it on: add thinly sliced red onion, tomatoes (halve the larger ones), and crumbled ricotta salata.
Sprinkle generously with the herbs.
Serve it with the jar of dressing or mix it all together, whichever you prefer.
Sweet tomatoes, creamy avocado, sharp red onions, salty ricotta salata, earthy herbs and spicy-sour dressing…all in one bowl!
Tomato Avocado Salad with Spicy Lime Vinaigrette
Spicy Lime Vinaigrette:
juice of 2 limes (about 3 Tablespoons)
8 mint leaves
1/4 cup cilantro
1 jalapeno, sliced (remove seeds for less heat)
1 large clove garlic, chopped
1 teaspoon cumin
1 teaspoon smoked paprika
salt to taste
sugar, honey or agave nectar (optional)
Add everything except salt and sweetener to a blender or mini food processor and blend until well combined. Add salt to taste and sweeten if desired. I added about a teaspoon or two of agave nectar because I like a bit of sweetness when having something spicy. Set aside while assembling the salad.
Tomato Avocado Salad:
2 avocados, halved and sliced crosswise
1/4 of a red onion, very thinly sliced
1 pint of mixed cherry and grape tomatoes, larger ones cut in half
4 ounces of ricotta salata or feta, crumbled
handful of cilantro, chopped
small handful of mint, chopped
On a platter, layer the avocado, red onion, tomatoes and cheese. Sprinkle on herbs. Serve with Spicy Lime Vinaigrette. Enjoy!
